County, Culinary to Host Food Repurposing Workshop
Residents will learn to make leftovers shine, decrease food waste, increase sustainability

POUGHKEEPSIE, NY – Building off the success of a similar event earlier this year, the Dutchess County Division of Solid Waste Management, in collaboration with the Culinary Institute of America (CIA), invites residents to register for an innovative, free Food Repurposing Workshop. This engaging discussion and cooking demonstration, led by Jason Potanovich ’96, Associate Dean – School of Culinary Arts, will educate attendees about food sustainability, showing participants how to creatively transform leftovers into delicious new dishes, minimizing food waste.

Dutchess County Executive Sue Serino said, “Food waste is a pressing issue, and we are thrilled to again work with the Culinary Institute of America to offer this valuable workshop to our neighbors. This initiative will teach practical ways to reduce waste, save money and contribute to a sustainable future. Residents can register online for a chance to attend this educational event, which will take place on Thursday, Nov. 20, from 6 to 7:30 p.m. at the CIA’s Hyde Park campus. This past June, Dutchess County and the CIA partnered for a Food Waste Reduction Workshop, which received rave reviews from those in attendance.

Food waste continues to pose significant environmental and economic challenges, and this event provides an opportunity for residents to learn practical strategies for everyday cooking. The workshop offers a unique chance for residents to enhance their culinary skills, reduce food waste and support a more sustainable community.

Due to limited space, attendance for this workshop will be determined through a registration drawing. Residents interested in securing a spot must register between Oct. 22 and Nov. 5 by visiting the Dutchess County Solid Waste Management website; more information is available by emailing solidwastemgmt@dutchessny.gov or calling 845-486-2841. The drawing to select attendees will take place on Nov. 7, and those chosen will be notified shortly thereafter.

Kerry Russell, Deputy Commissioner for the Division of Solid Waste Management said, “By not utilizing our leftover food we miss an opportunity to nourish ourselves and conserve resources. In the U.S., approximately 30 percent of all waste is food waste. When we reduce food waste, we decrease our overall waste stream, lower our carbon footprint and save money. Simple actions can make a lasting difference, and we invite residents to learn how.”
